At Halloween, I love my sweets. I remember as a kid going out for Halloween and collecting an entire pillowcase full of treats. As an adult, I’m not quite into candy but I think have a sweet tooth at times. One of my fave Halloween candies are those waxy pumpkins and caramel corn. My mom would always get them from the Bulk Barn each year, and it was such a seasonal treat.
I know so many people who hate candy corn, but this Candy Corn Caramel Popcorn is nothing like the 0ld school treat. It uses the sweetness of the candy corn and turns it into this unbelievable, savoury-sweet combo, especially if you’re like us and use salted popcorn.

The hardest part of this recipe is getting the melting just right. Because candy corn is kind of waxy, you really have to work to melt it. Every 20 seconds or so take your brown sugar-cream-butter mixture out of the microwave and crush the candy corn to continue to melt it. Eventually, it will run smooth, and taking it out to stir it so often will prevent burning.

You can always add caramels to the mixture. Most caramel corn recipes call for corn syrup, but I found that whipping cream acts as a powerful solvent and adds a richer taste.

Ingredients
  • ½ cup candy corn
  • 5 vanilla caramels
  • ¼ cup butter
  • ¼ cup brown sugar
  • ½ cup whipping cream
  • 6 cups salted popcorn
 
Instructions
  1. Preheat oven to 375 degrees.
  2. In large microwave safe bowl, melt candy corn, caramels, butter, brown sugar and whipping cream in the microwave for short 20 second bursts at a time, crushing and stirring until melted and smooth.
  3. Fill a large oven-safe dish with popcorn. Once caramel mixture is ready, pour overtop of popcorn. Place on middle rack in oven and cook for 25 min, stirring popcorn halfway through. The goal is to make sure every ounce of popcorn is covered in caramel!
  4. Once popcorn has finished cooking, let cool for at least 10 minutes before enjoying to ensure a satisfying crunch!
