Well HIIIIII there.
….so deceiving. I’m not actually that peppy. I mean, I’m in a fine mood, but I’m also freezing. But it’s supposed to be warmer today and even warmer tomorrow, so I’m hopeful we still have a few warm-ish days left before end of fall/winter kicks in.
Oh, so this just happened as I was typing this. I decided that I wanted to work on my laptop instead of my desktop so I could lay on the couch and watch ‘Friends’. Sooo I grabbed my laptop, opened it up and nothing. Black, blank screen. Nada. I then pressed the ‘power’ button and it turned on for like 2 seconds and then the screen went blank and my laptop started making these beeping noises. Beep……beep……beep. I immediately, without giving it a second thought, assumed my laptop died. The next logical step was to start crying. CRYING. Someone help me.
Side note #1: my laptop is from 2011 and completely out of storage space (which is why I got a desktop), so having it die wouldn’t be the most surprising thing ever. Side note #2: everything that’s on my laptop is on my desktop, so, technically speaking, I don’t need my laptop.
So there I was, crying and hugging my laptop and telling it that I was going to miss it, when all the sudden Layla comes up to me and starts hugging me (i.e. putting her paws on my shoulders) and licking my face and I just started smiling. Like, what’s wrong with me?! Why am I crying over a laptop. I then closed my laptop, put the charger on, and sat on Instagram. Twenty minutes later, I opened my laptop, pressed the ‘power’ button and wouldn’t you know—it turned on! I then proceeded to hate myself and write this post. So yeah…. apparently it was just low on battery. Merp.
SO ANYWAY—about this Thai noodle bowl..
Chili lime is and probably will forever be one of my favorite flavor combinations. It’s one of those ‘when in doubt, choose chili lime’ flavors. This dish is one of those super easy weeknight meal dinners. Why? Because as the noodles are cooking, you simply chop up and heat the veggies and then everything should finish around the same time. Through it all into one bowl and mix everything together and BOOM, dinner is served. Oh! This also makes an awesome meatless meal—juuuuuuust saying.
Chili Lime Thai Noodle Bowl

Serves: 2-4
Ingredients
- 1 box Pad Thai rice noodles
- 2 tbsp olive oil
- 1 large carrot, chopped OR sliced (whichever you prefer)
- ¼ cup peppers (I used mixed, but feel free to use your favorite kind), chopped
- 1 garlic clove, minced
- 1 cup white mushrooms
- 1 cup edamame*
- Juice from 1 lime
- ¼ cup red chili sauce**
Instructions
- Cook noodles in a large pot of water over stovetop.
- While noodles are cooking, heat olive oil in a large skillet and add carrot, peppers, garlic, mushrooms, and edamame; cook over medium-high heat until softened, stirring occasionally.
- Once noodles are cooked, drain water from pot and add vegetables; stir.
- Stir in lime juice and chili sauce.
- Add salt and pepper to taste.
- Enjoy!
Notes
*It's easier to eat if you buy shelled edamame, but you don't have to. I just had to shell mine as I was eating the dish.
